Vault Cocktail Lounge is so proud to have Chef Zack Cooper providing magic in our kitchen. Zack’s focus is on using fresh local ingredients for our dinner, happy hour, and late night food menu. We know that our neighbors in Portland’s Pearl District are looking for high quality seasonal dinner options. We believe our dinner options are some of the best meals of any cocktail bar in the Pearl (or Portland for that matter). Our philosophy when we opened Vault Cocktail Lounge was the belief that way too often we’re asked to choose between amazing cocktails and amazing dinner. This means that we either sacrifice the best cocktails for the best dinner or the best dinner for the best cocktails. Right from the start we knew we wanted to provide both. Just like our cocktails, our food program begins with the freshest ingredients available and under the expertise of Chef Zack, dinner dishes are developed that complement our cocktails.
